Cupcakes

Okay, I just need to share something. I love cupcakes. Love them. They are so beautiful and soooo tasty. I just got Martha Stewart's `Cupcakes' book for Christmas so obviously I have to try them out. I have to say that so far, I have tried two of the cupcakes; `One-Bowl Chocolate Cupcakes' and `Ice Cream Cone Cupcakes' and they weren't my favourite cupcakes. I mean, they were still terrific, but not my favourite. The chocolate ones were a bit dry and the ice cream cone ones were a bit dense.

My favourite cake and cupcake recipe comes from Hershey's Cookbook, or you can find it online. It is Hershey's `Perfectly Chocolate Chocolate Cake'. But, do not make the frosting that this recipe recommends, because Martha Stewart's are a billion times better.
So, which frostings have I tried?
1. Dark Chocolate Frosting; easy, sooooooo creamy, pipes well, soooo yummy!!
2. Swiss Meringue Buttercream; a little bit more work but so good! Apparently you can freeze it, defrost, remix and use it but mine did not work when I defrosted it. So, use it fresh. SO GOOD.

Do not look at the amounts of sugar and butter. So, so, soooooo bad. However, I don't really have a hard time taking in calories that are super yummy and homemade. I don't eat store bought baked goods (well, except for bread) because nothing beats homemade! Also, most of the cupcakes I make are mini cupcakes so it's really just 1/4 the calories of a regular size cupcake:)

Can't wait for dessert tonight!

  2. Maria-I was there yesterday! Totally reasonable prices and yummy selection. There is also a new chinese food restaurant there which is going to be quite the temptation for me. I also saw a new spa there, wanna get a manicure with me sometime?:)

  4. Thanks for sharing about the cupcakes Louise! I'm making the cupcakes for a friends wedding cupcake/cake in June and they want Chocolate ones and Vanilla ones with the icing in their wedding colours. I've been looking at Martha Stewarts recipes and I probably won't try the one bowl chocolate ones now that you said they were a bit dry. I know she also has a different Chocolate cupcake recipe, just called Chocolate Cupcakes. Also I told them about the Cakepops, so I'm going to make smaller ones and each cupcake will have a small cakepop (without the stick) on top of the icing kinda like how you sometimes see cherries or candy on top of cupcakes in pictures. Right now I am trying to figure out what iciing to use. I just bought a decorating set for piping icing with like 28 different tips, so I'm very eager to try it out. I wanted to ask you about the Swiss Meringue Buttercream though because I was going to try that one. I wouldn't think that it would freeze well so I'm surprised that the recipe said it would. I'm also going to try Easy White Icing, Fluffy Vanilla Buttercream, and Vanilla Buttercream (all on her website). But by far the best cupcakes I have ever made came from a box and not a recipe. They were so moist and fluffy, and I think it was because the recipe used egg whites instead of the whole egg like most cake mixes do. Anyway, thanks for sharing your love of cupcakes!!!

  5. I craved cupcakes so badly the last few weeks of pregnancy, I baked myself a few dozen on a continual basis. Yummm... the classic birthday party kind: white with the sprinkly white icing. You know, the kind that takes you right back to grade 2, when you actually had to wear pretty dresses to friends birthday parties?
    But oh, they tasted good.
