Here is another great recipe from Mennonite Women Can Cook. I think I tripled the recipe and added some more ingredients (tomatoes, green onions). It's so easy, tasty, kid friendly and affordable. I made it during Nya's nap and then just warmed it up before dinner. If I don't do it this way, things get very crazy around here from 4-5pm. Koen gives it 100 thumbs up!
PS Make sure you serve with sour cream and salsa:)
